Oh Joy Eats reader Sanaa emailed me the other day with a fun bite-sized snack she came up with and wanted to share called Vanilla Small Stacks. While throwing a little get together for friends, Sanaa decided to combine thin slices of bananas with vanilla wafers, topped with blueberries and cinnamon for a sweet & easy bite-sized dessert. I loved her idea so much that I tried it myself and added an extra special ingredient…ice cream! So here you go…my take on Sanaa's vanilla small stacks…Vanilla Banana Ice Cream Small Stacks!
You'll need:
-Vanilla Wafers {Sanaa and I both prefer Trader Joe's Ultimate Vanilla Wafers which have real flecks of vanilla beans}
-ice cream {I used vanilla here, but chocolate or coffee would be delish}
-thin slices of banana
-cinnamon {just a shake for each stack}
Drop a teaspoon of ice cream on one wafer, cover with banana slices, sprinkle with cinnamon, and finally, top with the second wafer. As a non-dairy alternative, omit the ice cream for Sanaa's original creation vanilla stack creation {bottom photo}. Enjoy!

yum! definitely one of those why-didn’t-i-think-of-that recipes. so simple and they look soooo good! gonna try ’em this week.
We’ve done this with ginger snaps (Mi-Del are my favorite)…very yummy.
