Last night, my husband got inspired to make some fried chicken. So he threw some together on the fly using this surprisingly easy recipe for Northern Fried Chicken from Blue Ribbon in New York. I whipped up some homemade mashed potatoes and spinach to accompany the tasty fried treat. The matzo meal addition made the skin so light, crispy, and the chicken not very oily at all. Be sure to have some spicy bbq sauce and some honey for dipping…
SO.
DARN.
GOOD.

  2. That sounds great. I love the idea of making fried chicken quesadillas with the leftovers too. I bet that’s awesome!
