leftover lunch…



…last night's herb roasted chicken turned into a pulled chicken salad sandwich the following day. Mix pulled cold chicken, mayonnaise, brown mustard, capers, pepper, salt, garlic powder, and a dash of Tabasco to taste. Add lettuce and tomato {if desired} and top on toasted English muffins!

  2. sub nonfat greek yogurt for the mayo and you’ve got an even healthier, yet still delicious version!

  4. I love a curried chicken salad with light mayo, mango chutney, curry, walnuts, and chopped apples served in half of a melon to skip the bread.

  5. Roasted chicken always makes for delicious chicken salad the next day…now I want some.
