{make it} egg in a basket…

Inspired by this breakfast from the Sanitarium, I recreated the same Eggs in a Basket topped with avocados. It's so tasty, easy to make, and a great source of protein and antioxidants.

For each serving, you'll need:
– Sourdough bread {any will do but I like sourdough to offset the other flavors here}
– Butter
– One egg
– Half of an avocado
– Salt, Pepper, and Sriracha to taste


Here's how:

Butter up a frying pan and bring to medium to high heat. Cut a circle out of the middle of each piece. and place on pan. Toast one side {similar to making grilled cheese} until brown and slighly toasted.

Flip the bread over and crack and egg right into the middle. Cook until the bottom of egg is no longer sticking to the pan.

Flip over once more to cook the egg on the other side. Cook to your desired level of yolkiness. {I like a runny yolk as you can see in the first photo.}

Finally, plate and top with salt and pepper to taste. For a little extra kick, top with a bit of sriracha. Enjoy!

  1. i learned how to make this is grade school…i remember we called it “egg in a picture frame”…brings back memories…sigh

  3. My father used to call this ‘gas house eggs’. I have no idea why. He also used to fry up the holes he cut out in butter and we used to eat them on the side. :/. I thought it was white trashy u make it look gourmet. True story.

  4. Also called ‘Bird in a Basket’ it’s the best of diner food….delicious. Sometimes I put a little bit of jam on the bread to balance the richness of the egg yolk.

  5. I grew up with these, we called them “hole in ones” though I don’t know why. lol But I’ve become addicted to avocado (I just ate half of one straight out of the skin last night), and I must try it this way now! Looks delicious!

  6. in my family we call it “egg in toast”, maybe not very original… i’m loving the idea of adding avocado to it! yum!

  7. In Australia we usually call this “toad in the hole”…except my mother-in-law, who calls it “egg-o-hole-o”, which I also like 🙂

  9. have you tried frying a little garlic too? before adding the bread to the pan, crush a couple garlic cloves (to let the juices out) and add to the pan with some olive oil on low to medium heat. once they start to sizzle/become fragrant, add the bread and follow the rest of the recipe as is. turn the cloves so they brown on both sides. it flavors the oil that’s soaking into the bread and gives you delicious garlic on the side! i had it this way for breakfast today (including the avocado, YUM).
