the thinnest ice cream sandwiches…

Ice cream sandwiches are kind of one of my most favorite things ever. So I'm always looking for new ways to make an impromptu sandwich. My new favorite combination includes these Hazelnut Graham Crackers from Potter's Crackers. They are super thin and crispy, and not too sweet…so it makes for a lighter bite-sized treat. Here, I paired it with my favorite local ice cream, Carmela's salted caramel…ya-ummm! — Joy

  1. that looks amazing! i love ice cream sandwhiches but they always hurt my teeth a bit – chomping teeth first into ice cream is a bit of a shock!

  2. ooh! This just made me want to try pairing Trader Joe’s Meyer Lemon cookie thins with their vanilla ice cream… I might have to go buy some tonight!

  3. Ooh these are so pretty and tasty sounding!
Since I don’t live by that hip ice cream place I’m going to try making salted caramel ice cream tonight. I’ve been daydreaming about it for months!

  4. Oh my, that looks divine. Joy, where can we find a wooden cake stand like the one you’ve shown here? Love it!

  5. Awesome! My mom and brother are the duo behind Potter’s Crackers and I couldn’t be more proud. They make some seriously fantastic crackers! Looks yummy!

  6. I used Potter’s crakers at my wedding last fall and they were a big HIT!! Thank you Nancy so much for the amazing crakers. People are still asking where I found these crackers at.
