With autumn here, we’re craving ways to keep the freshness of summer into the fall, too. So, today, we’re sharing our recipe for an easy-to-make and beautiful fall salad inspired by a Thanksgiving dinner…
You’ll need:
For the salad…
– 5 oz arugula
– 1/4 red onion, thinly sliced
– 1/4 cup chopped carrots
– 1/4 cup dried cranberries
– 1/4 cup pecans
– 1 pear, sliced
– 3 strips of bacon, chopped
For the dressing…
– 1/4 cup olive oil
– 1/4 cup red wine vinegar
– 1/4 cup cranberry relish
– 1 Tbs minced shallot
– 2 tsp garlic powder
– pinch of salt & pepper
Simply combine all the above ingredients together and toss with the cranberry dressing! Enjoy as a main meal for lunch or as a side to dinner!
