I have a confession. I don't get peanut butter & jelly sandwiches at all. As a kid I never liked them, and as an adult I still don't despite my love for fun flavor pairings. But the other day I discovered that if I use the combo on an ice cream sandwich, well, my whole opinion of them changes instantly. So, I'm loving this spin on pb&j using Trader Joe's salted peanut butter, Blue Chair's Damson Plum Jam, a mini scoop of Dairy-Free Strawberry Ice Cream all sandwiched between Toasted Coconut Crisp Cookies {also from TJ's} . It's like a refreshing pb&j with an extra kick of coconut…perfect for a sunny spring day… — Joy

  1. Oh my – pb&j has been my absolute go to during this pregnancy! I never have eaten them before, but something about that sweet plus peanut combo hits the spot for me! Combined with ice cream, I might fall over from happiness!

  2. I’m a crunchy peanut butter and honey person myself. But oh man, my TJ’s had free samples of those coconut cookie thins with honey goat cheese – HEAVEN. Had to walk away.

  4. So glad to know I’m not alone in my dislike for peanut butter and jelly sandwiches! They aren’t BAD, I just don’t get why people go nuts for them. This, however, sounds like it’s worth a shot.

  5. as soon as i read this post i stepped away from the computer, grabbed my car keys and sped off to trader joe’s! i love coconut, but hate the texture of it. i ate my cookies with nutella – also delicious, like a starbucks mocha coconut frap.
