I have a confession. I don't get peanut butter & jelly sandwiches at all. As a kid I never liked them, and as an adult I still don't despite my love for fun flavor pairings. But the other day I discovered that if I use the combo on an ice cream sandwich, well, my whole opinion of them changes instantly. So, I'm loving this spin on pb&j using Trader Joe's salted peanut butter, Blue Chair's Damson Plum Jam, a mini scoop of Dairy-Free Strawberry Ice Cream all sandwiched between Toasted Coconut Crisp Cookies {also from TJ's} . It's like a refreshing pb&j with an extra kick of coconut…perfect for a sunny spring day… — Joy

Why must you do this to me at 8:45 in the am! Now I must go gather all of these ingredients and eat this asap! Xx
p.s. you looked darling last night at your Kate Spade party!
Yum!!
This was one of my best inventions when I was pregnant. Hazelnut choc was usually part of the game too! Yum!
Oh my – pb&j has been my absolute go to during this pregnancy! I never have eaten them before, but something about that sweet plus peanut combo hits the spot for me! Combined with ice cream, I might fall over from happiness!
I can’t believe it! I’m peanut butter and jelly obsessed! These look so delicious!
I had a pb&j everyday for lunch all the way through elementary school – so yummy! I’ll have to try this. 🙂
Mmmmm! This looks so yummy! I’m the polar opposite, pb&j fo life! (p.s. creamy peanut butter ONLY!)
I’m a crunchy peanut butter and honey person myself. But oh man, my TJ’s had free samples of those coconut cookie thins with honey goat cheese – HEAVEN. Had to walk away.
YUM! I love a good old fashioned pb&j so this cookie & ice cream version sound like heaven.
YUMMY!
OK fine I’ll start that diet some other day. This tip was a low blow Joy but I will find it in my heart to forgive you 😉
That sounds delicious!
Oh my gosh! I wish we had a trader Joe’s in Vancouver, sounds delicious!
I SO have to try this!!
What a fun spin on the sandwich! I’ve found that peanut butter can go on nearly everything.
Cheers, Elizabeth

So glad to know I’m not alone in my dislike for peanut butter and jelly sandwiches! They aren’t BAD, I just don’t get why people go nuts for them. This, however, sounds like it’s worth a shot.
how interesting! 🙂 I’m craving a snack now…

as soon as i read this post i stepped away from the computer, grabbed my car keys and sped off to trader joe’s! i love coconut, but hate the texture of it. i ate my cookies with nutella – also delicious, like a starbucks mocha coconut frap.
