I used to hate whipped cream. Like I didn't understand why it existed, and I didn't want it on a milkshake, on top of ice cream, and I definitely didn't want it in my hot chocolate. It all changed when I had homemade whipped cream for the first time a few years ago. Not the kind from the can but the kind someone made by hand using good ole' fashioned heavy cream. And boy…now I can't get enough. Today, this Paris Brest pastry {from my favorite bakery in LA, Proof} is my new best friend. Yes, this cream puff-like pastry concoction is pretty amazing, but even better is the almond-flavored whipped cream in the middle. I could slather it on just about anything… — Joy

Paris brest is by far my favorite french pastry! I could have it every day….except for my pants won’t have it. 🙂
the filling in paris brest is called creme mousseline…. heavenly stuff! i recently learned how to make it, which is a dangerous knowledge to have 🙂
I agree with you about whipped cream! The stuff in the can doesn’t even deserve the same name.
