One night when I was prepping my “family meal” at the Oh Joy office (where each of us is assigned one day each week to make lunch for the whole team), I mixed a bunch of leftovers together into a dish that turned out way better than I expected and is now an office favorite. We wanted to share the recipe with you today for an easy lunch or dinner full of protein, flavor, and a kick of spice!
You’ll need:
-1 whole rotisserie chicken (pull apart chicken into shreds)
-1 package of baby spinach
-1 package of Trader Joe’s trofie colore macaroni
-pomegranate seeds
-edamame
-1/4 cup sliced scallions
–Trader Joe’s Sriracha Ranch dressing
Simply cook the pasta to al dente, let it cool. Then combind all ingredients together and toss with dressing. Add salt, paper, and olive oil to taste! The dressing has a nice zing and spice to it!

I just made TJ’s trofie colore macaroni and even after cooking it 6 minutes over the suggested cooking time it was under cooked in the middle and border line over cooked on the outside. What’s your secret?
Sounds and looks like a great salad for the summertime! I’ll try to make this, might add some mango and will need to find an alternative for the ranch dressing.
